Ingredients

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat. This ensures your cookies bake evenly and don’t stick.

Step 2: Mix Wet Ingredients

  • In a large mixing bowl, whisk together the vegetable oil, eggs, and vanilla extract until fully combined and smooth. This creates the wet base that will help bring the cake mix together into cookie dough.

Step 3: Add Cake Mix and Strawberries

  • Gradually add the strawberry cake mix to the wet ingredients, stirring to combine. Once the mixture forms a thick dough, fold in the crushed freeze-dried strawberries. If you’re using chocolate chips, gently fold those in now as well.

Step 4: Portion the Dough

  • Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.

Step 5: Bake

  • Bake the cookies in the preheated oven for 10-12 minutes. The edges should be set, but the centers will still be soft. Avoid overbaking to keep them chewy.

Step 6: Cool and Enjoy
