Ingredients

  • 1 large head cauliflower cut into bite-sized florets
  • 2 tablespoons olive oil or any mild-flavored oil
  • 2 tablespoons ranch seasoning mix store-bought or homemade
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon chili powder adjust according to your spice preference
  • 0.25 teaspoon cayenne pepper optional, for extra heat
  • to taste salt
  • to taste freshly ground black pepper
  • fresh chopped parsley or chives for garnish, optional

Instructions

Step 1: Preheat the oven and prepare the cauliflower

  • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat to prevent sticking and make cleanup easier. Wash the cauliflower and cut it into evenly sized bite-sized florets to ensure even roasting.

Step 2: Make the spicy ranch seasoning blend

  • In a small bowl, combine the ranch seasoning mix, smoked paprika, garlic powder, onion powder, chili powder, cayenne pepper (if using), salt, and black pepper. Mix well to ensure all the spices are evenly distributed.

Step 3: Toss cauliflower with oil and seasoning

  • Place the cauliflower florets in a large mixing bowl. Drizzle the olive oil over the florets and toss to coat evenly. Sprinkle the spicy ranch seasoning blend over the cauliflower and toss again until every floret is coated generously in the seasoning.

Step 4: Roast the cauliflower

  • Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Make sure the florets aren’t overcrowded to allow for proper roasting and crispiness. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the cauliflower is tender and golden brown on the edges.

Step 5: Garnish and serve

  • Once roasted, remove the cauliflower from the oven. Taste and adjust seasoning if needed. Garnish with freshly chopped parsley or chives for a burst of color and fresh flavor. Serve warm with your favorite dipping sauce or enjoy as is!

Equipment

  • Large baking sheet
  • Parchment paper or silicone baking mat
  • Large Mixing Bowl
  • Small Bowl

Notes

For best texture, make sure cauliflower florets are dry before seasoning. Broil for 2-3 minutes at the end if extra crispiness is desired. Use homemade ranch seasoning to control salt and additives. Don’t overcrowd the pan to ensure even roasting. Adjust spice levels to your preference. Leftovers can be reheated in the oven to regain crispiness. Variations include adding nutritional yeast or vegan cheese for a cheesy twist, tossing in buffalo sauce for a buffalo flavor, or cooking in an air fryer for quicker results.
