Ingredients

  • 1 cup pecan halves you can substitute with walnuts if preferred
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • 2 cups high-quality semisweet chocolate chips
  • 1/4 teaspoon sea salt optional, for a salted caramel twist

Instructions

  • Start by lining the slow cooker insert with parchment paper or a silicone liner. Lightly grease the parchment paper if necessary to prevent sticking.
  • Add the pecan halves to the slow cooker and toast them on the low setting for about 30 minutes, stirring occasionally. Once toasted, remove the nuts and set them aside.
  • In the slow cooker, combine the granulated sugar, unsalted butter, and heavy cream. Stir gently to mix. Cover and cook on low for 1 to 1.5 hours, stirring every 20 minutes until thick and caramel-colored. Stir in the vanilla extract and sea salt if using.
  • Spread the toasted pecans evenly over the parchment-lined slow cooker insert. Pour the warm caramel mixture over the pecans, spreading it carefully to cover all the nuts.
  • Add the chocolate chips on top of the caramel layer. Cover and cook on low for an additional 20-30 minutes, or until the chocolate has completely melted. Use a spatula to gently spread the melted chocolate evenly.
  • Turn off the slow cooker and carefully lift the parchment paper with the chocolate turtles out of the insert. Place on a baking sheet and transfer to the refrigerator. Chill for at least 2 hours, or until firm.
  • Once set, remove from the fridge and cut into bite-sized pieces or squares. Serve immediately or store for later.
