Ingredients

  • 1 pound ground chicken or turkey sausage use a mild or spicy sausage alternative
  • 8 large eggs
  • 2 cups whole milk or any plant-based milk of your choice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 cups cubed day-old bread such as white or whole wheat, crusts removed
  • 1 1/2 cups shredded cheddar cheese or your favorite cheese blend
  • 1/2 cup chopped green onions or chives
  • 1 cup diced bell peppers or mushrooms optional, for extra veggies

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter to prevent sticking.

Step 2: Cook the Sausage

  • In a large skillet over medium heat, cook the ground sausage until fully browned and cooked through, about 6-8 minutes. Break it apart with a spatula as it cooks. Once done, drain any excess fat and set aside.

Step 3: Mix the Egg Base

  • In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until thoroughly combined.

Step 4: Assemble the Casserole

  • Add the cubed bread, cooked sausage, shredded cheese, chopped green onions, and any optional vegetables into the egg mixture. Gently fold everything together until the bread is evenly coated.

Step 5: Transfer to Baking Dish

  • Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 6: Bake

  • Bake uncovered for 45-50 minutes or until the casserole is set and the top is golden brown. A toothpick inserted into the center should come out clean.

Step 7: Cool and Serve

  • Allow the casserole to cool for about 10 minutes before slicing. This helps it set further and makes serving easier.

Equipment

  • 9x13-inch Baking Dish
  • Large Skillet
  • Mixing Bowl
  • Whisk

Notes

Use day-old bread for best texture as it soaks up the egg mixture without becoming mushy. Let the casserole rest after baking to firm up and make slicing neater. Feel free to swap sausage for plant-based alternatives or add vegetables like spinach, bell peppers, or mushrooms for extra flavor and nutrition. For a creamier casserole, substitute half the milk with heavy cream or creamy plant-based milk. To save time, cook and crumble sausage the night before. Use sharp cheddar for tanginess or mild cheese for subtle taste.
