Instructions

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure even baking.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set this mixture aside.
  • In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 3-4 minutes.
  • Add the egg to the butter-sugar mixture and beat until fully incorporated. Then, mix in the peppermint extract and milk.
  • Gradually add the flour mixture to the wet ingredients, mixing on low speed until just combined. Avoid overmixing to keep the cookies tender.
  • Gently fold the crushed peppermint candies into the dough.
  • Using a cookie scoop or tablespoon, scoop out dough balls and roll them in granulated sugar if desired for a sparkly finish. Place the dough balls about 2 inches apart on the prepared baking sheets.
  • Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set and just beginning to turn golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
