Ingredients

  • 1 cup creamy peanut butter ensure no alcohol or non-permitted additives
  • 1/4 cup honey or maple syrup for a natural sweetener
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups crispy rice cereal check for permissible ingredients
  • 1 1/2 cups dark chocolate chips dairy-free or regular as preferred
  • 1 tablespoon coconut oil optional, helps with chocolate coating

Instructions

  • In a large mixing bowl, combine the creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well blended.
  • Gently fold the crispy rice cereal into the peanut butter mixture. Stir until all the cereal is evenly coated.
  • Using your hands or a small cookie scoop, form the mixture into bite-sized balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper. Wet your hands slightly if needed to prevent sticking.
  • Place the tray of peanut butter balls in the refrigerator for at least 30 minutes to firm up.
  • In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  • Using a fork or toothpick, dip each peanut butter ball into the melted chocolate, ensuring it is completely coated. Allow excess chocolate to drip off before placing the ball back on the parchment-lined tray.
  • Return the chocolate-coated peanut butter balls to the refrigerator and chill for another 30 minutes, or until the chocolate is set.

Notes
