Instructions

Prepare the Peach Filling

  • Start by peeling and slicing your peaches. To easily peel peaches, blanch them in boiling water for about 30 seconds, then transfer them to an ice bath to remove the skin. In a large mixing bowl, combine the sliced peaches with 1/2 cup of the sugar, ground cinnamon, fresh lemon juice, and vanilla extract. Stir gently to coat the peaches evenly and set aside to macerate while you prepare the batter.

Preheat the Oven and Prepare the Baking Dish

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with a little butter or non-stick spray to ensure your cobbler doesn’t stick.

Make the Batter

  • In a medium bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup sugar. Slowly add the milk, stirring until the batter is smooth and free of lumps. Finally, mix in the melted butter until fully incorporated. The batter will be slightly thick but pourable.

Assemble the Cobbler

  • Pour the batter evenly into the prepared baking dish. Do not stir. Spoon the peach mixture, including the juices, evenly over the batter. The batter will rise up around the peaches as it bakes, creating the cobbler’s signature texture.

Bake

  • Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean. The filling should be bubbling around the edges.

Cool and Serve
