Ingredients

  • 4 cups fresh or frozen corn kernels thawed if frozen
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh cilantro finely chopped
  • 2 tablespoons unsalted butter or olive oil for a dairy-free option
  • 1 clove garlic minced
  • 1 tablespoon fresh lime juice
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  • Start by heating a large skillet over medium heat. Add the butter or olive oil to the pan and allow it to melt and coat the surface evenly. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the corn kernels to the skillet and cook, stirring occasionally, for about 5-7 minutes. You want the corn to be tender and slightly golden but not burnt.
  • Once the corn is cooked, remove the skillet from the heat. Stir in the freshly grated Parmesan cheese, mixing well until the cheese melts slightly and coats the corn. Add the lime juice, salt, and freshly ground black pepper to taste.
  • Finally, fold in the chopped cilantro. Give everything one last gentle stir to combine all the flavors perfectly.
  • Transfer the Parmesan Cilantro Corn to a serving dish and enjoy immediately. This dish is best served warm as a delicious side.

Equipment

  • Large Skillet
  • Grater
  • Knife

Notes

Use fresh corn for best results, thaw frozen corn thoroughly, and grate Parmesan cheese fresh. Adjust lime juice to taste and consider adding variations like red pepper flakes or sour cream for different flavor profiles. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently.
