Ingredients

  • 8 pieces lasagna noodles uncooked, no-boil noodles work well too
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese divided
  • 0.5 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups cooked chicken breast shredded (you can substitute with ground beef or keep it vegetarian with sautéed spinach and mushrooms)
  • 3 cups marinara sauce store-bought or homemade
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • fresh basil or parsley for garnish (optional)

Instructions

  • Begin by bringing a large pot of salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. If you’re using no-boil noodles, skip this step. Once cooked, drain the noodles and lay them flat on a clean kitchen towel to prevent sticking.
  • In a mixing bowl, combine the ricotta cheese, 1/2 cup of shredded mozzarella, grated Parmesan, egg, minced garlic, Italian seasoning, and a pinch of salt and pepper. Mix well until the ingredients are fully incorporated. Then fold in the shredded chicken breast. This mixture will be the creamy, flavorful filling for your roll ups.
  • Preheat your oven to 375°F (190°C). Spread about 1/2 cup of marinara sauce evenly on the bottom of a baking dish. Take one lasagna noodle and spread roughly 1/4 cup of the ricotta and chicken filling evenly over the noodle, leaving a small border on the edges. Carefully roll the noodle up from one end to the other. Place the rolled noodle seam-side down in the baking dish. Repeat this process with the remaining noodles and filling.
  • Once all the roll ups are in the dish, pour the remaining marinara sauce evenly over the top. Sprinkle the remaining 1/2 cup shredded mozzarella cheese on top for that melty, golden finish.
  • Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly browned.
  • Let the lasagna roll ups cool for a few minutes before serving. Garnish with fresh basil or parsley if desired, and enjoy!

Notes

Prevent sticking by laying cooked noodles flat on parchment paper or a clean kitchen towel. Avoid overfilling the noodles to make rolling easier. No-boil noodles save time and eliminate the need to boil noodles. Assemble roll ups a day in advance and keep refrigerated until ready to bake. Freeze assembled roll ups before baking for up to two months. Customize fillings and cheeses to suit dietary preferences.
