Ingredients

  • 4 salmon fillets (6 ounces each), skin on
  • 1/2 cup pineapple juice (fresh or 100% natural)
  • 1/4 cup low-sodium soy sauce (ensure it’s a -certified brand or substitute with coconut aminos for a gluten-free option)
  • 2 tablespoons honey or pure maple syrup
  • 2 tablespoons freshly squeezed lime juice
  • 2 cloves garlic minced
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional, for a gentle kick)
  • 1 tablespoon chopped fresh cilantro or green onions (for garnish)
  • Salt and pepper to taste

Instructions

  • In a medium bowl, whisk together pineapple juice, soy sauce (or coconut aminos), honey (or maple syrup), lime juice, minced garlic, grated ginger, sesame oil, and crushed red pepper flakes if using.
  • Place the salmon fillets in a shallow dish or resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated. Cover or seal and refrigerate for at least 30 minutes, up to 1 hour.
  • Preheat your grill to medium-high heat (about 375°F to 400°F). Clean and lightly oil the grates to prevent sticking.
  • Remove the salmon from the marinade, letting excess drip off. Season lightly with salt and pepper. Place skin-side down on the grill. Cover and cook for 4 to 6 minutes.
  • Gently flip the fillets and cook for another 3 to 5 minutes, until salmon is opaque and flakes easily with a fork.
  • Transfer the grilled salmon to a serving platter. Garnish with chopped cilantro or green onions. Serve immediately with your favorite sides.

Equipment

  • Grill
  • Medium Bowl
  • Resealable Plastic Bag

Notes

Use fresh salmon with skin on for best flavor and crispy texture. Avoid over-marinating to prevent the acid from cooking the fish. Consider using a grill basket or foil to prevent sticking. Let salmon rest after grilling for moistness. This dish can also be broiled or cooked in a grill pan.
