Ingredients

  • 200 grams feta cheese crumbled
  • 1/2 cup plain Greek yogurt for creaminess
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 1 teaspoon honey or maple syrup optional, to balance acidity
  • freshly ground black pepper to taste
  • a pinch salt optional, depending on feta saltiness
  • chopped fresh parsley or chives for garnish

Instructions

  • Start by gathering all your ingredients. Crumble the feta cheese into smaller pieces if it’s not already crumbled. Mince the garlic finely and chop fresh herbs like dill and parsley.
  • In a food processor or blender, combine the crumbled feta, Greek yogurt, olive oil, minced garlic, and lemon juice. Blend until smooth and creamy. You may need to stop and scrape down the sides a few times to ensure everything is well incorporated.
  • Add the chopped dill, honey (if using), and black pepper. Pulse a few times to mix these ingredients into the dip without over-blending the herbs.
  • Give your dip a taste. Depending on the saltiness of your feta, you may or may not need to add a pinch of salt. Adjust lemon juice for tanginess or honey for a hint of sweetness as desired.
  • Transfer the dip to a serving bowl. Drizzle a little olive oil on top and sprinkle with chopped parsley or chives for a fresh pop of color. Serve chilled or at room temperature with your choice of dippers.

Notes

Use a good-quality feta for the best flavor — sheep’s or goat’s milk feta tends to be creamier and less salty. If you don’t have a food processor, whisk the ingredients vigorously in a bowl for a chunkier texture. Let the dip rest in the fridge for at least 30 minutes before serving to allow flavors to meld. Adjust garlic amount to taste. For smoother texture, add a splash of water or more olive oil while blending. Serve with warm pita bread, fresh cucumber slices, bell pepper strips, or whole-grain crackers.
Variations include adding crushed red pepper flakes or harissa for spice, blending in roasted red peppers, mixing fresh basil, oregano, or mint, folding in sun-dried tomatoes, or topping with toasted pine nuts or walnuts. For a vegan version, substitute feta and yogurt with plant-based alternatives.
Store leftovers in an airtight container in the fridge for up to 4 days. Stir and add olive oil if thickened before serving again. Avoid freezing to maintain texture.
