Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 packet ranch seasoning mix ensure it’s free from non-permissible ingredients
  • 6 slices turkey bacon cooked and crumbled (or beef bacon for a different flavor)
  • 1/2 cup chicken broth or stock ensure chicken broth is prepared without non-permissible ingredients
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Chopped fresh parsley or chives for garnish (optional)

Instructions

  • Place the boneless, skinless chicken breasts at the bottom of your slow cooker. Season them lightly with salt and pepper to enhance the flavors.
  • Cut the softened cream cheese into chunks and scatter them evenly over the chicken breasts. Sprinkle the entire packet of ranch seasoning mix over the chicken and cream cheese, ensuring an even distribution for maximum flavor.
  • Sprinkle the minced garlic over the mixture, then pour the chicken broth carefully around the edges of the crock pot. The broth will help keep the chicken moist as it cooks and contribute to a creamy sauce.
  • Cover the slow cooker with its lid and cook on low for 6 to 7 hours or on high for 3 to 4 hours. The chicken should be fully cooked through and tender enough to shred easily with a fork.
  • Once cooked, use two forks to shred the chicken directly in the slow cooker. Stir well to combine the shredded chicken with the cream cheese and ranch mixture, creating a smooth, creamy sauce.
  • Sprinkle the shredded cheddar and mozzarella cheeses over the shredded chicken. Add the crumbled turkey bacon on top. Cover again and cook for an additional 10 to 15 minutes on low until the cheese melts completely.
  • Give the mixture a final stir to incorporate the melted cheese and bacon. Serve hot, garnished with chopped fresh parsley or chives if desired. This dish pairs beautifully with steamed rice, crusty bread, or even wrapped in pita bread for a delicious sandwich.

Equipment

  • Slow Cooker
  • Two Forks

Notes

Use boneless, skinless chicken breasts for best shredding results. Soften cream cheese before adding to ensure smooth melting. Cook on low for tender chicken. Ensure ranch seasoning is free from non-permissible ingredients or make your own. Add smoked paprika or cayenne pepper for heat if desired. Leftover sauce is great as a dip. You can add vegetables such as spinach or bell peppers during the last hour of cooking. Variations include spicy versions with jalapeños, different cheeses, meat alternatives like chicken thighs, serving as a sandwich, low-carb options, and adding yogurt or sour cream for extra creaminess.
