Ingredients

  • 6 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar packed (for topping)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter melted (or use coconut oil for dairy-free)

Instructions

  • Start by peeling, coring, and slicing your apples into thin, even slices. Place them in a large mixing bowl and toss with lemon juice, maple syrup, brown sugar, cinnamon, nutmeg, and vanilla extract to create a spiced apple filling.
  • In another bowl, combine the flour, rolled oats, brown sugar, baking powder, and salt. Stir the dry ingredients together until evenly mixed. Slowly pour in the melted butter or coconut oil and mix until the topping resembles coarse crumbs.
  • Lightly grease the inside of your slow cooker. Pour the spiced apple mixture into the bottom of the Crock Pot and spread evenly. Sprinkle the crumbly topping evenly over the apples without stirring.
  • Cover the Crock Pot and cook on low for 3 to 4 hours until the apples are tender and the topping is soft with a slightly crisp texture. Avoid opening the lid during cooking.
  • Turn off the Crock Pot and let the cobbler cool for 10 minutes before serving. Serve warm alone or with vanilla ice cream, whipped cream, or caramel sauce.
