Ingredients

  • 1 package instant pistachio pudding mix (3.4 oz, ensure it’s made with ingredients)
  • 1 can crushed pineapple in juice (20 oz, do not drain)
  • 1 cup miniature marshmallows
  • 1/2 cup chopped walnuts or pecans (optional, for crunch)
  • 1 cup heavy cream or whipping cream (or use a plant-based cream for a dairy-free version)
  • 2 tablespoons powdered sugar (optional, for added sweetness)
  • 1 teaspoon vanilla extract (ensure -certified or pure extract)

Instructions

  • Pour the heavy cream into a large mixing bowl. Using an electric mixer, beat the cream on medium-high speed until it begins to thicken. Gradually add the powdered sugar and vanilla extract, then continue to beat until stiff peaks form. Set aside.
  • In a separate large bowl, combine the instant pistachio pudding mix with the entire can of crushed pineapple, including the juice. Stir well until the pudding mix is fully dissolved and the mixture is smooth.
  • Gently fold the miniature marshmallows and chopped nuts (if using) into the pudding and pineapple mixture.
  • Carefully fold the whipped cream into the pudding mixture until fully combined, avoiding overmixing to keep the fluffiness intact.
  • Transfer the salad to a serving bowl or individual cups. Cover with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  • Once chilled, give the salad a gentle stir and serve cold. Garnish with extra chopped nuts or a few whole pistachios if desired.
