Ingredients

  • 1 ½ pounds fresh Brussels sprouts trimmed and halved
  • 2 tablespoons extra virgin olive oil
  • 1 medium orange zested and juiced
  • 1 lemon zested and juiced
  • 3 cloves garlic minced
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon maple syrup or honey optional, for a touch of sweetness
  • ½ teaspoon red pepper flakes optional, for a bit of heat
  • fresh parsley chopped, for garnish

Instructions

  • Preheat your oven to 400°F (200°C) to prepare for roasting the Brussels sprouts.
  • Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Slice them in half lengthwise.
  • In a small bowl, combine the olive oil, orange zest, orange juice, lemon zest, lemon juice, minced garlic, salt, pepper, and maple syrup or honey if using. Whisk together until well blended.
  • Place the halved Brussels sprouts in a large mixing bowl. Pour the citrus dressing over them and toss until each sprout is well coated. Add red pepper flakes if desired and toss again.
  • Spread the Brussels sprouts in a single layer on a baking sheet lined with parchment paper or silicone baking mat, with cut sides facing down.
  • Roast the Brussels sprouts for 25-30 minutes, shaking the pan or stirring halfway through for even browning, until golden brown and tender.
  • Transfer the roasted Brussels sprouts to a serving dish, garnish with freshly chopped parsley, and serve warm.
