Ingredients

  • 4 large ripe tomatoes preferably heirloom or vine-ripened, cut into wedges
  • 1 small red onion thinly sliced
  • 1 cup crumbled feta cheese or a -certified cheese alternative
  • 1/4 cup fresh cilantro leaves roughly chopped
  • 1 avocado sliced (optional but highly recommended)
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1-2 chipotle peppers in adobo sauce adjust to taste
  • 1 tablespoon lime juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon honey or agave syrup
  • salt and freshly ground black pepper to taste
  • olive oil for drizzling, optional

Instructions

  • Start by washing your tomatoes thoroughly. Cut each tomato into 6-8 wedges depending on size. Place the tomato wedges on a large serving platter. Scatter the thinly sliced red onions evenly over the tomatoes. If you’re using avocado, slice it just before serving to prevent browning and arrange the slices on top or alongside the tomatoes.
  • In a small blender or food processor, combine the sour cream (or Greek yogurt), mayonnaise, chipotle peppers in adobo sauce, lime juice, minced garlic, and honey. Blend until smooth and creamy. Taste your dressing and add salt and pepper to your liking. If you prefer a thinner dressing, add a splash of water or more lime juice to reach your desired consistency.
  • Pour the chipotle dressing evenly over the tomato wedges and onions. Use a spoon to gently spread the dressing so each wedge is nicely coated without breaking the tomatoes.
  • Sprinkle crumbled feta cheese and chopped cilantro leaves over the salad. If you want, drizzle a bit of olive oil on top to add richness and shine.
  • This salad is best served fresh so the tomatoes retain their crisp texture. Pair it alongside your favorite grilled dishes or enjoy as a flavorful light meal.
