  • 1/4 cup buffalo sauce choose a brand without any alcohol or non-permissible ingredients
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika optional, for extra flavor
  • Celery sticks and ranch or yogurt-based dip for serving (optional)

Instructions

  • In a medium bowl, combine the cooked chicken with buffalo sauce, mixing well until the chicken is fully coated. Set this aside to let the flavors meld.
  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  • On a lightly floured surface, roll out the pizza dough into a rectangle about 12x10 inches in size.
  • Evenly spread the buffalo chicken mixture over the dough, leaving about a 1-inch border around the edges. Sprinkle the shredded mozzarella and cheddar cheese over the chicken.
  • Starting from one of the longer edges, carefully roll the dough into a tight log, similar to a cinnamon roll. Using a sharp knife, cut the log into 12 equal slices.
  • Place the slices on the prepared baking sheet, cut side up, spacing them about 1 inch apart. Brush the tops with melted butter and sprinkle with garlic powder, onion powder, and smoked paprika if using.
  • Bake for 15-18 minutes, or until the bites are golden brown and the cheese is bubbly and melted.
  • Allow the pizza bites to cool slightly before serving. Pair them with celery sticks and your favorite dip for a classic buffalo experience. Enjoy!
