Ingredients

  • 2 cups cooked shredded chicken breast rotisserie chicken works well
  • 8 ounces cream cheese softened
  • 1/2 cup plain Greek yogurt for creaminess and a slight tang
  • 1/2 cup ranch dressing use a -certified or homemade version
  • 3/4 cup hot sauce such as Frank’s RedHot or a similar -certified brand
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • freshly ground black pepper to taste
  • chopped green onions or chives for garnish

Instructions

  • Start by shredding your cooked chicken breast into bite-sized pieces. Using rotisserie chicken can save time and adds great flavor, but homemade poached or baked chicken works just as well. Set aside.
  • In a large mixing bowl, combine the softened cream cheese, Greek yogurt, ranch dressing, and unsalted butter. Use a hand mixer or a sturdy spoon to blend until smooth and creamy. This mixture will be the rich, tangy foundation of your dip.
  • Stir in the hot sauce, garlic powder, onion powder, and black pepper. Adjust the amount of hot sauce depending on how spicy you like your dip. Mix well to ensure an even distribution of heat throughout the creamy base.
  • Fold the shredded chicken, sharp cheddar, and mozzarella cheese into the mixture. The cheese will melt during baking, creating that gooey, irresistible texture you want in a buffalo chicken dip.
  • Preheat your oven to 350°F (175°C). Transfer the dip mixture to a baking dish, spreading it evenly. Bake for 20-25 minutes or until the dip is bubbly and the cheese on top has melted and started to brown slightly.
  • Remove the dip from the oven and let it cool for a few minutes. Sprinkle chopped green onions or chives on top for a fresh, vibrant finish. Serve warm with your favorite dippers such as celery sticks, tortilla chips, crackers, or sliced bell peppers.

Notes

For best results, use freshly shredded chicken. Soften the cream cheese before mixing to avoid lumps. Adjust spiciness by varying hot sauce and ranch dressing. Try adding bacon, jalapeños, or fresh herbs for extra flavor. Store leftovers covered in the fridge for 3-4 days or freeze for up to 2 months. Reheat until bubbly before serving.
