Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with a bit of oil or line it with parchment paper for easy removal.
  • In a large mixing bowl, combine the mashed bananas with the vegetable oil. Add the sugar, eggs, and vanilla extract. Whisk everything together until well blended and smooth.
  • In a separate bowl, sift together the flour, baking soda, salt, and cinnamon. This helps distribute the ingredients evenly and prevents clumps.
  • Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Be careful not to overmix; just stir until you no longer see dry flour. Overmixing can result in a dense, tough bread.
  • Fold in the chopped nuts, saving a few to sprinkle on top before baking if you like a crunchy crust.
  • Pour the batter into your prepared loaf pan, spreading it evenly.
  • Place the loaf pan in the preheated oven and bake for about 60 to 70 minutes. Check doneness by inserting a toothpick into the center — it should come out clean or with just a few moist crumbs. If the top browns too quickly, loosely cover with foil.
  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. This helps the bread set and makes slicing easier. Serve plain, with butter, or your favorite spread.
