Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 2-3 fresh jalapenos thinly sliced, seeds removed for less heat
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil. Season the chicken breasts on both sides with salt, pepper, garlic powder, onion powder, and smoked paprika. Place the chicken in the baking dish and drizzle with olive oil. Bake for 20-25 minutes, or until the chicken is cooked through and juices run clear. Once cooked, remove from the oven and let cool slightly before shredding or dicing the chicken into bite-sized pieces.
  • In a medium bowl, combine the softened cream cheese, mayonnaise, and shredded cheddar cheese. Stir until well blended. Add the thinly sliced jalapenos (adjust the amount to your heat preference). Mix in the shredded chicken to the cheese mixture, ensuring everything is evenly combined.
  • Slice the slider buns horizontally, keeping the top and bottom halves intact. Carefully spread a generous amount of the chicken and cheese mixture on the bottom half of each bun. Place the top halves back on and arrange the sliders in a baking dish or on a baking sheet lined with parchment paper.
  • Brush the tops of the slider buns with melted butter for a golden finish. Bake the assembled sliders at 375°F (190°C) for 10-12 minutes, or until the cheese is bubbly and the buns are lightly toasted. Remove from the oven and garnish with fresh cilantro or parsley if desired. Serve warm and enjoy!
