Ingredients

  • 2 large boneless, skinless chicken breasts about 1 pound
  • 1 cup plain breadcrumbs preferably whole wheat or panko for extra crunch
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1 large egg
  • 1 tablespoon water
  • 1 cup marinara sauce choose your favorite brand or homemade
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish (optional)
  • Cooking spray or olive oil for greasing the baking dish

Instructions

  • Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper to prevent sticking.
  • Slice each chicken breast horizontally to create two thinner cutlets. If uneven in thickness, lightly pound to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  • In a shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Stir well.
  • In a separate bowl, whisk the egg with 1 tablespoon of water to make the egg wash.
  • Dip each chicken cutlet into the egg wash, letting excess drip off, then press firmly into the breadcrumb mixture, coating both sides.
  • Place the coated chicken cutlets in the prepared baking dish in a single layer. Lightly spray or drizzle olive oil on top of each cutlet. Bake for 20 minutes until cooked through and golden brown.
  • Remove the baking dish from the oven. Spoon marinara sauce evenly over each cutlet, then sprinkle shredded mozzarella cheese on top. Return to oven and bake for 5-7 minutes until cheese is melted and bubbly.
  • Let the chicken rest for a few minutes. Garnish with fresh basil leaves if desired. Serve hot with favorite sides like spaghetti, garlic bread, or a green salad.
