Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

  • 1/4 cup brown sugar packed

  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons light corn syrup or honey as a natural sweetener alternative

Instructions

  • In a small bowl, toss the diced apples with lemon juice, cinnamon, nutmeg, and corn syrup or honey. Set aside to let the flavors meld while you prepare the cookie dough.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • In a separate large bowl, beat the softened butter with both sugars until light and fluffy. Add the egg and vanilla extract, beating until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. The dough should be soft but not sticky.
  • Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or line with paper liners.
  • Take about 2 tablespoons of cookie dough and press it evenly into the bottom and up the sides of each muffin cup to form a cup shape. Spoon a heaping tablespoon of the apple filling into each cookie dough cup.
  • Bake the cookie cups for 18-22 minutes, or until the cookie crust is golden brown and the apples are tender.
  • Allow the cookie cups to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature, optionally drizzled with caramel sauce or topped with whipped cream.

Notes
