Ingredients

  • 1 lb ground beef choose a lean option
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • 1 teaspoon Worcestershire sauce ensure it’s made without anchovies for dietary preferences
  • Salt and pepper to taste
  • 8-10 pieces egg roll wrappers
  • 1 egg egg beaten, for sealing the egg rolls
  • Cooking spray preferably olive oil or avocado oil spray

Instructions

  • Start by heating a non-stick skillet over medium heat. Add the ground beef, breaking it apart with a spatula. Cook for about 5-7 minutes until the beef is fully browned. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet, cooking for another 2-3 minutes until the onions are soft and translucent.
  • Stir in ketchup, mustard, Worcestershire sauce, salt, and pepper. Mix well and cook for an additional 2 minutes to blend the flavors. Remove from heat and let the mixture cool slightly before adding cheese.
  • Once the beef mixture is warm but not hot, fold in the shredded cheddar cheese. The residual heat will begin melting the cheese, creating a gooey texture inside the egg rolls.
  • Lay an egg roll wrapper on a clean surface with one corner pointing toward you (like a diamond shape). Spoon about 2-3 tablespoons of the cheeseburger filling near the corner closest to you.
  • Fold the corner over the filling, then fold in the two side corners snugly. Roll the wrapper tightly toward the opposite corner, sealing the edge with a brush of beaten egg to keep everything together.
  • Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  • Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the egg rolls in the basket in a single layer, making sure they don’t touch to allow even cooking. Spray the tops of the egg rolls with a light coating of cooking spray.
  • Cook for 8-10 minutes, flipping halfway through, until the wrappers are golden brown and crispy.
  • Remove the egg rolls from the air fryer and let them cool for a minute or two before serving. Serve with extra ketchup, mustard, or your favorite dipping sauce like a tangy special sauce or spicy mayo.

Notes

Avoid overcrowding the air fryer basket. You can bake these egg rolls at 400°F (200°C) for 15-20 minutes if you don’t have an air fryer. Variations include swapping cheese types, using different proteins, adding veggies or spice, or using different wrappers. Store leftovers refrigerated up to 3 days or freeze uncooked egg rolls and cook from frozen.
